Turn cooking mode on

Step 1

Heat the olive oil in a large frying pan over a medium-high heat. Season the diced beef with salt and black pepper, then brown in batches for 2-3 minutes, turning occasionally, until nicely coloured on the outside. Transfer the browned beef to the slow cooker.

Notes

  • Squeeze the spinach well. Frozen spinach holds a surprising amount of water. Squeezing it thoroughly prevents the curry from becoming watery.

  • Don’t skip browning the beef. Although you can technically add the beef straight to the slow cooker, browning it first gives the finished curry a much deeper, richer flavour.

  • Be careful when adding the yoghurt. Turn the slow cooker off before stirring in the Greek yoghurt. Adding it to very high heat can cause yoghurt to split.

I’ve used frozen spinach with the water squeezed out because it’s much more compact. So yes, effectively! Fresh will wilt down pretty quickly, but that’s a lot of raw spinach to add to the slow cooker, so you may need to add it a little at a time! :) x

Hi Amy, the recipe includes 350g dried weight rice (to serve 4) and the yoghurt sauce. I’m so sorry it’s been missed from the ingredients list - will rectify ASAP xx
