Hi Cheryl, Heat The Pan Place a large non stick pan over medium-high heat and lightly spray with oil. Cook The Chicken Add the diced chicken and cook for 5-7 minutes until lightly golden and cooked through. Remove and set aside. Soften The Veg In the same pan, add the red onion, peppers, and garlic. Cook for 4-5 minutes until softened. Build The Sauce Return the chicken to the pan. Add the peri-peri sauce, chicken stock, Elmlea (or soft cheese) smoked paprika, and black pepper. Stir well to combine. Simmer Let everything simmer gently for 8-10 minutes so the flavours develop. Thicken The Sauce (if needed) Mix the cornflour with a splash of water to make a slurry, then stir it into the pan. Cook for 2-3 minutes until the sauce thickens. Finish & Serve Sprinkle with chopped parsley and serve hot.

A lovely meal for a Sunday rather than doing a roast. I had used 3 tbsp of peri peri sauce than the recommended also 1/2 tsp of the peri salt and it turned out perfectly for us
