Notes

Note: Yoghurt can curdle if overheated. To prevent this, stir the yoghurt based sauce into the chicken over the LOWEST heat setting, allowing it to gently warm through — this should only take a couple of minutes. If you're unsure, remove the pan from the heat, stir in the sauce, then return it to the hob on a low temperature for 2 minutes. This will prevent your sauce from splitting.

This was a disaster! My sauce split but I used full yogurt as it needed using! Maybe that was why?? I don’t think I will try it again. X

Hi Adele. I’m so sorry that it didn’t turn out for you. Yogurt is delicate, and direct high heat can cause it to curdle. It’s best to lower the pan to a gentle simmer before stirring in the yogurt sauce. It needs stirring through for a couple of minutes just to gently heat it through. My guess is that the hob setting was too high upon pouring in the yoghurt sauce, or it was left to simmer in the sauce for too long. Could this have been the cause? Xx

Hi Lindsey, Yes quite possibly! It was bubbling when I put it in! I have an electric hob sometimes forget it stays hot longer! I may try again later down the line. Thanks for the feedback. X

Thank you for your feedback Adele, it has been valuable and is appreciated. I have now made a note on the recipe to make other members aware that yoghurt based sauces can curdle and therefore the sauce needs to be added at a low temperature. Just to add a little more clarity! I am so sorry that your dinner was a disaster! xx
