Chicken Tikka Masala Rice Bake

A simple one dish chicken tikka masala rice bake that’s packed with flavour and easy to prepare. Tender chicken thighs are marinated in yogurt and tikka spices, then baked on top of a fragrant mixture of rice, tomatoes, garlic, and curry paste. Everything cooks together in the oven until the rice is fluffy and the chicken is perfectly tender. Finished with a cool mint yogurt drizzle and fresh coriander, it’s a comforting and satisfying meal with minimal effort.
