Wow that was absolutely delicious. Spicy but really tasty and 60g of protein. Also a good one for meal prep lunches.

How long would this last in the fridge for meal prepping do you think please?

Hi Sophie, This should keep well for around 3 days in the fridge if stored properly in airtight containers. Best option for meal prep: keep the dressing separate and add it just before eating. That can stretch freshness closer to 4 days depending on how fresh the lettuce is! Lettuce can start to loose its crunch after a couple of days - tip, pop a sheet of kitchen roll in with it to absorb any moisture! Keeps it fresher for longer. This also works with bagged salads. The chicken will be good for 3-4 days xx
