Oven Baked Jerk-Inspired Honey Lime Chicken

Sticky, sweet and fiery with bold Caribbean flavour, this oven baked jerk chicken is the ultimate fakeaway style dinner. Tender chicken thighs are marinated in honey, lime and warming spices, then roasted until caramelised and lightly charred. Served with fluffy rice and vibrant greens, it’s a high protein, flavour packed meal that feels indulgent but is simple enough for any night of the week.

Hi - this may be a silly question but what is the difference between Dunns River all Purpose seasoning and jerk seasoning. Is the Dunns River a paste or powder? Thanks for your help. I love your recipes by the way.

Hi Jean, So the all purpose seasoning is a flavours booster - it contains paprika, coriander, mustard, onion powder, celery. Jerk Seasoning is blended with allspice, chilli powder and thyme to give you a taste of the Caribbean. I use both as a shortcut to adding multiple seasonings, plus a little extra paprika! I’m so sorry it has taken longer to reply - half term week is manic when trying to work and balance my girls! So pleased that you are loving the recipes ❤️ happy to help anytime xx

Hi Adele, I was naughty and used the micro rice pouches - Uncle Ben's Caribbean style! For ease xx
