Festive Leftover Turkey Curry

If you’re looking for a simple yet delicious way to use up leftover turkey during the festive season, this spicy turkey curry is the perfect solution. It’s warming, full of flavour, and comes together quickly - ideal for turning holiday leftovers into something exciting and comforting. This recipe was originally created as part of an advertisement for a rice brand last year, but it works just as well with any long grain rice, so feel free to use whatever you have on hand. A great way to reduce waste while enjoying a satisfying, homemade meal.

Step 1

Start by cooking the Long Grain Rice. Rinse the rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice, water, and a pinch of salt. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes, until the rice is tender and fluffy. Remove from heat, allow to stand for 5 minutes (covered) and fluff with a fork.
