My husband absolutely loved this. Said it's even better than his favourite linguine that I make. Luckily I made extra to freeze for his tea while I'm away next weekend.

Gorgeous dish, though I find I have to part boil the pasta beforehand as when I have done it in the tray in the past it never comes out cooked. Still was delicious

Might be size of the tray you’re using. The pasta also needs to be (just) submerged, even if you need to add a little extra stock! 😊I’m so pleased that you enjoyed it Kiri xx

do your red onions and pepper always come out crunchy? They didnt cook down so that they are soft and the harder texture was not appreciated by my son. I didnt mind so much but I guess you'd have to fry them off to start with? Nice flavour anyway and easy to make

Hi Scott, I use a vegetable chopper I bought on Amazon which dices everything really small and evenly, so I didn’t have any issues with this particular recipe. Although I do personally prefer when my veg retains a little bit of bite. I’ll definitely keep this in mind - It has been flagged before on a different recipe. So I’ll try to mention it in the notes, so that you can all cook to your desired preference! I’m so glad that you enjoyed the flavour and simplicity! 😊

Loved this pasta dish! Full of flavour and had a nice creamy sauce, some pasta dishes I find can go a bit dry but not this one. The chorizo and the chicken together worked perfectly. Forgot to finish with coriander but I did add some jalapeños
