Step 1

Brown the chicken and onion. Slice the chicken into bite sized pieces. Heat a large frying pan over medium-high heat and brown the chicken in batches until golden on the outside. It does not need to be cooked through at this stage. Remove the chicken from the pan and set aside. Add the chopped onion to the same pan and cook for a few minutes until softened, using the juices left from the chicken to add extra flavour.

Notes

  • Brown the chicken first for extra flavour and a deeper colour.
  • Cook the onion in the same pan after the chicken to make the most of the flavour left behind.
  • Add the cream cheese and cornflour towards the end of cooking so the sauce can be adjusted to the perfect consistency.
  • Don’t worry about an exact amount of water for the stuffing. Add it gradually until the mixture is soft enough to spread.
  • If the casserole is too thin, add a little more cornflour slurry and allow it to cook for a few minutes.
  • If it’s too thick, loosen it with a splash of water or chicken stock.
